I took another course at Planet Cake in Balmain this weekend.  This time, the theme was “celebration cupcakes.”  Obviously, these are for celebrating something very girly!  They were a lot of fun to make…a little time-consuming, but really not very hard.

    insomnisnack, KJ and Lewis– I used fondant (which is also called rolled icing in Australia, I think), and the piping is done in simple royal icing. There’s a really thin coating of white chocolate ganache below the fondant, which glues it to the cupcake.

    baking soda– The time consuming parts were really just kneading the colors into the fondant and rollling it out. The decorating went pretty quickly.

    Great job on the cupcakes! This is my first comment here and I also have a question for you. I am planning on making some cupcakes but need to buy some cupcake liners first. Can you tell me what size cupcake liner you used?

  20. Hi Trisha. I decorated these cupcakes in a class I took. We didn’t actually bake the cupcakes ourselves…they were baked for us before class, so we could just concentrate on the decorating. They were just regular sized cupcakes, but the liners were about 1/4″ taller than say the Reynolds ones you’d get at supermarket (if you are in US). They were about 2.5″ in diameter and 1.5″ tall. Any brand for a regular muffin/cupcake tin should work, though. Hope this helps.

  23. Trisha–Thanks a lot! I just use a little point and shoot, a Nikon Coolpix S6. There’s a closeup function on it (I think it’s called a “macro” function, and probably most cameras like this have it) that I use for my photos. I try to get natural lighting and not use the flash. I have a teeny cheap tripod that helps steady the camera, b/c without the flash, the autofocus is also disabled. Then if I have any unintentional fuzziness, I clear it up with Photoshop.
