		<description><![CDATA[I made these pancakes today.  I&#039;d made them before but lost the recipe and so found it here.  I learned about these on a Rudy Maxa travel show last year when he went to Sydney and mentioned that one could get the recipe online, which I did, and they are every bit as good as you and he have described.  Without a doubt, they are the fluffiest hotcakes I&#039;ve ever tasted.  Some day I&#039;ll try them from Bill&#039;s kitchen, but he&#039;s 8000 miles away at the moment :-)]]></description>

Amanda-I have made cottage cheese pancakes, too, and they are great! That recipe was quite similar, actually, and I bet that here the two cheeses could be used interchangeably.

Have you made pancakes with cottage cheese? Those are really good too! So long as you don&#039;t mind having little curds in the pancakes. I personally like that but some people get freaked out about that though :)]]></description>
