Apples, cinnamon and brown sugar…these are flavors that make me instantly think of fall, but, really, I enjoy them anytime of year. Karen of Something Sweet by Karen must, too, because she’s picked Dorie’s Applesauce Spice Bars for this week’s TWD.
These bars weren’t exactly what I expected, but I mean that in a good way. I was thinking they’d bake up into something chewy and kind of dense, but they were actually like a snack cake..super moist and with a cake-style crumb. A toffee-like glaze sweetly seals the deal. I couldn’t just stop at the itty-bitty bar-sized potions Dorie suggested, so we ate bigger squares. We enjoyed them so much that next time I’ll make more than just a third of a recipe (which baked up nicely in a loaf pan).
For the recipe, see Baking: From My Home to Yours by Dorie Greenspan, or read Something Sweet by Karen. Don’t forget to check out the TWD Blogroll!

Your toffee-like glaze has such a deep, rich color — it looks great!

That glaze looks amazing. Just like a sticky date pudding, but richer!

I agree – Dorie’s servings would have been tiny. I ended up with 16 decent sized bars – half the number that Dorie did.

That looks truly decadent!

I enjoyed this recipe. Your bars look very good. I think I’ll make again in the fall!

I had the same reaction to the texture- I thought it would be more dense and not chewy. I was okay with it too. I love how well I can see the glaze on yours!

Looks delicious. A third of the recipe would have been the perfect amount. I liked these a lot more than I thought I would.

I did half a recipe in the loaf pan. It was thicker, of course, but then you can cut the pieces smaller and pretend you aren’t eating as much 🙂

OMG, those look so good. Spice cake was my very favorite as a child. It still ranks up there,

glad you liked them. i agree, they were kind of like a snack cake and actually way more “fall” than i anticipated. i still have your apple snack cake on my list to make, by the way. i was ready at one point and we ate all the dried apples before i had a chance to make them!! 🙂 that crispy sugary topping still calls my name!!!

I went with bigger squares as well 🙂 Snack cake is the perfect term for this as well. And your description makes me wish I hadn’t skipped the glaze!

I’m with you…I definitely liked that they were more cakey than bar cookie like. I’m a sucker for all things cake.

You know your glaze sold me on making these. After a school supply trip to the store I think I’ll whip up a recipe of these. Sounds like something my Mom and Dad would enjoy sharing as well. Might be just the right pick me up for them 🙂 Thanks Steph. They really looks delicious and comforting.

I loved these too! Your bars look delicious, especially that glaze 🙂 I gave most of mine away so I wouldn’t be tempted to eat the whole pan!
