These look lovely, and just the recipe I need! I picked up a bag of local and organic buckwheat flour the other day from a local market, with no thoughts of how I would use it. And of course, it’s maple syrup season! yay:)

I love baking with buckwheat–it adds such a nice, warm flavor to otherwise-plainer baked goods. I’ve made buckwheat pancakes before and I found that they’re delicious with some homemade blueberry-maple sauce.

Buckwheat cakes are my favorite, especially smeared with homemade cherry jam. To really emphasize the nutty flavor, try tossing in some cooked brown rice – with enough rice in the batter the little cakes are delicious cold snacks later!
