French Fridays with Dorie: Spicy Vietnamese Chicken Noodle Soup

I may have skipped last week’s French Fridays with Dorie, but there was no way I was going to skip this week’s.  I crave soup went the weather gets cool, and this Spicy Vietnamese Chicken Noodle Soup is full of flavors I love– chiles, cilantro and coconut.

There’s a lot of flavor packed into this coconut broth, as it’s infused with ginger, cilantro stems or root, coriander, star anise and peppercorns.  I threw in some lime leaves and a bashed lemongrass stalk, too. I went heavy on the lime juice and fish sauce to give it extra twang. This is the kind of soup where, when you’re almost to the bottom, you set down your spoon and pick up the bowl to slurp up the rest of the broth and noodles.

  1. Ahhh…the peanuts look SO good. I think I was hoping mine would have more of a Thai taste. I’m thinking I need to try this recipe again … and use peanuts as a garnish! Great idea!!

  3. Ah, you met Dorie…so nice. Your soup looks absolutely perfect. I don’t even want to think about how you got those little red dots so uniformly formed and spaced…nope, not going to think about it or I won’t make it. YUM.

  4. Are those cashews? They, along with the chile oil and cilantro really make your soup jump off the screen. I drained my bowl too!

    • yes, anytime i make something with an asian twist, i use it as an excuse to toss cashews all over it!

  6. Great photo! I like that you added cashews! I used some “fire” oil in ours…so I had similar “hot” drops in my soup too!!

  9. I so agree, a terrific broth , full of flavors bursting in the mouth, there is never a dull moment with these!!
    Love ur addition of the nuts and we did the same too for dinner, coz i had some leftover roasted flaked almonds from the tarts had baked and broken cashewnuts too, they are my all time fav!

    Oh am sure meeting Dorie would be absolutely warmth filled moments and i would love to , too!!
