these are some of my favourite meringues ever. I made them pretty small when I did, but they were still lovely and chewy. Now I want to make choco-meringue at work again! Must find excuse to do so.

Not only easy they were tasty to boot. Definitely a keeper. Have to try baking them a little longer and making them a little longer.

Okay, so this really clarifies my question about whether my meringues came out right or not. It looks like they probably are how they’re supposed to be, but a few were a little bigger, so I bet those were extra chewy and could have hung out in the oven longer. Good to know! I’ll have to keep the coffee idea in mind for next time too, because something bitter would be welcome alongside the super sweet meringues.

I really liked these. It’s not humid here in Seattle and I just baked mine an hour and they were crispy on the outside and slightly chewy right in the center.

They look great…I hate the humid hot sticky weather…we had a little of that on our trip to DC…I could not wait to get back to the cool mountain air of Idaho!
