Aren’t these Vanilla Polka Dots so cute? Can you even tell they are cute on this ugly tray? Actually this is my very favorite sheet tray; I do not mean to talk badly about it and think it is beautiful in its own way.

Back to the cookies…these are made from Dorie’s Do-Almost-Anything Vanilla Cookie Dough. We’ve done a couple of things with it before, but this is the first time we’ve used it for scooped cookies rather than rolled ones. I added a little extra vanilla (in the form of paste) to my dough. The cookie scoops are rolled in a good amount of Swedish pearl sugar before baking. Swedish pearl sugar can be hard to find. I bought a box at IKEA several years ago and thankfully it doesn’t go bad. Hahaha. The sugar polka dots give a sweet crunchy coating to the cookies, but their insides stay soft. I shared these with the dudes at the gym, and we all liked them.

White Chocolate and Poppy Seed Cookies are another riff on Dorie’s Do-Almost-Anything Vanilla Cookie Dough. This time the tasty sugar cookie dough contains, you guessed it, chopped white chocolate and poppy seeds. These bake up nice and crisp and the little bits of white chocolate in the dough kind of caramelize with the heat of the baking sheet. Do watch them in the oven at the end though…the edges can go from blonde to brown quite quickly. After the cookies have cooled, you can ice them with a bit more melted white chocolate, or just leave them be if you want something a tad less sweet.

Tuesdays with Dorie DC: Double-Ginger Crumb Cookies

It’s certainly the time of year to be baking with warm spices, and these Double-Ginger Crumb Cookies are a perfect candidate for your cute holiday cookie box. Or my very classy black plastic take-out box, as the case may be…whatevs, they’ll be eaten up regardless of container. These use Dorie’s Do-Almost-Anything Vanilla Cookie Dough, which makes a deliciously buttery sugar cookie, as the base. Fresh ginger gets worked into that dough, which is then rolled and cut. At the restaurant where I work, we keep a tub of sweetened ginger purée around that we use in a couple of things. I think it is really intense and delicious, so I took home a little blob of it to use in my dough. The next hit of ginger in these cookies comes from a crumb topping scented with ground ginger. I like these a lot. They’re not fancy looking, but lovely tasting, and perfect with tea.

Christmas spice cookies

When I want a cookie, I usually go for something chunky with a lot of stuff in it. It’s not that often that I’m like, “I’ll take a plain sugar cookie.” But then I have a really good one, like these Christmas Spice Cookies, and I’m reminded of just how much I like them.  These cookies begin with a delicious, basic vanilla sugar cookie dough (Dorie calls it “Do-Almost-Anything”) that’s then amped up with the usual warm holiday spices. You get a crisp, flavorful, subtly spiced cookie with the perfect sandy texture. I’m not much of a cookie decorator, as you can see…frankly, a child could have done better than the hack job I did here. I need more time and maybe a baking buddy to help me get into that, but even with just a sprinkle of sanding sugar, these were festive and tasty.
