Usually, when I make muffins, I’m trying to sneak a little whole wheat flour into the mix and hoping my husband won’t care.  Well, here’s a muffin that’s supposed to be full of grains…whole wheat, corn and oats.  Good for you stuff, but with a little AP flour so it doesn’t feel like a brick.  I did sneak something else in, though….a tablespoon of ground flaxseed (although wheat germ would be good, too).  For dried fruit, I used blueberries and apricots.  These aren’t big, high-doming muffins, but I’d be happy to wake up to them anytime.  In the book, they’re pictured with a big hunk of cheese, but I think they’re pretty good with a little jam.

    Your muffins sound really good and healthy too! I like to use a combo of whole wheat flour, wheat bran and rolled oats in my bran muffins.

    That muffin/jam combo looks amazing! What kind of jam is that? I used blueberries too, but fresh ones, and have been trying not to slather butter on when I eat them.

    Yours looks great, mine were rather flat-topped and I thought I did something wrong, so I made them again and they turned out the same way, so I figured it was just me and this recipe. Happy to hear that maybe it wasn’t so much me after all. They were delicious so who cares, right? Big hit around here. Love the sound of your combination of fruit, etc. and that spoonful of extra goodness is making my mouth water!

    Wheat germ – good idea! I have some in the freezer, but I pretty much just ignore it. 🙂 I’ll start sneaking it into muffins now.
