baking powder biscuits

Marion Cunningham’s Baking Powder Biscuits were good for breakfast, and also good for dessert, all dressed up like shortcakes.  These were easy to make.  I didn’t want to do an all shortening biscuit like the recipe called for, so I swapped out half of it for butter.  I rubbed my shortening/butter and dry ingredients together the night before and stashed the mix in a container in the fridge…in the morning I just had to work in the milk.  They didn’t rise as high as I wished they would have (maybe I should have patted them out less? or maybe they really do work best with all shortening?), but they were very tender, not dense at all.  I made square biscuits instead of round, just so I didn’t have to deal with scrap and reroll.

For the recipe, see Baking with Julia by Dorie Greenspan (it’s also here)  Don’t forget to check out the rest of the TWD Blogroll.

  1. Delicious!! 🙂

  2. Great idea the square biscuits. They look wonderful.

  3. Love your recipes and especially the title of this post 🙂 Check out my blog at warandpeach.com for similar literary puns and original recipes!

  4. We thought alike with this one it seems! It was nice to have an easier recipe so I could participate again. I love the shape you chose!

  5. Mine didn’t rise much either. I don’t have good luck with biscuits.

  6. That is the way to serve those biscuits!!

  7. Looks yummy! I tend to have varying results with biscuits rising myself, and never too sure about the cause (too much handling? Older baking powder? Humidity?). I thought the shortening gave them a bit of a different texture than my usual recipe with butter.

  8. These were tender.
Very clever to make them square 🙂

  9. Those look very delicious! I just found your blog by coincidence. I like it very much!

  10. Ouu!!! That looks really tasty! What a great idea to make them square. So easy! I ended up making them again today and patted them out to 1/2 inch thick before cutting. They came out a lot better. Yay!

  11. Your biscuits look delicious. A couple of suggestions to help them rise better: pat them out so the dough is thick (I pat mine out to an inch thick at least) and–baking powder works better when your ingredients are warm. If you have time, let the biscuits sit for about 20 minutes before you put them in the oven. Best of luck!

  12. The sweet biscuits versions are having me re-think my savory tendencies with biscuits.

  13. These baking powder biscuits are very delicious!

  14. Your dessert version looks fabulous! My biscuits did not rise as much as I would have liked either. I subbed all butter, and found out after, that my baking powder was expired…

  15. omg so lovely!!!!!!!!
