Cook the Book Fridays is closing the cover on Everyday Dorie at the end of February. I’d say I can’t believe there are only four recipes left, but really, I have another handful that I skipped along the way but would still like to make before I put the book on the shelf. I’m going to try and cover these on our group “off weeks.” One is the Umami Burger, which I actually made and photographed in time for the October 2021 posting, but then I just never wrote about it. Sometimes the hardest part about being a flood blogger is the actual blogging.

I don’t eat beef so I made this one with ground turkey instead. The meat is mixed up with sautéed chopped mushrooms and onions (plus breadcrumbs in my case, because I find turkey always needs a bit of binder) and seasoned with oyster sauce, soy sauce, sesame oil, and gochujang. Giving ground turkey this flavor-packed treatment is actually perfect, since it can use an umami-boost to make it taste more burgery. I rarely have hamburger buns at home, and actually often just eat my burgers as dressed patties sans bread, but I put these between sourdough slathered with gochujang mayo. Yum- one to be repeated, especially now that I’ve been reminded of it.

Everyday Dorie: Three-Pepper Burgers

three-pepper burgers

I made these Three-Pepper Burgers for Memorial Day dinner, and boy, that seems like a long time ago now! I tweaked the recipe to make them into turkey burgers (meaning I used ground turkey and a spoonful of bread crumbs to help bind it), since I don’t eat beef. The meat is mixed up with herbs, cheese and, of course, three types of peppers— roasted, pickled and spicy. I didn’t have any hamburger buns and I didn’t really feel like buying any…with only two of us, a bag of buns winds up taking space in the freezer forever. I did have some mini pitas on hand that were actually the perfect size to hold a burger. And since they are a little lighter than a regular bun, I could eat more sweet potato fries!

Everyday Dorie: Salmon Burgers

salmon burgers

One of my grandmas used to like to make salmon patties for dinner. They were a regular thing on nights when she’d babysit my brother and me. I can’t say that I loved them, but I thought about her as I made the Salmon Burgers from Everyday Dorie. Grandma used canned salmon, but these burgers are made with fresh salmon fillets, quickly zipped in the food processor. The fish mince is mixed with a lemony, herby yogurt concoction for moisture and flavor and formed into burgers. There was a lot of chatter on the C&Cs about how well the burgers held together (or didn’t) while cooking, so I took Mardi’s advice to add a sprinkling of breadcrumbs to the mix. After chilling the burger mix in the fridge for a couple of hours, I didn’t have any problem flipping them or getting them out of my nonstick pan.

The guy in this house got his burger on a bun. I had mine on a bed of lettuce instead, and ate it with a fork. Both got pickled red onions and a schmear of yogurt-herb sauce that pretty much mimicked the dressing mixed into the burgers themselves. I’d say this is an upgrade from Grandma’s canned salmon cakes, and I’d make them again.
