The Cake Slice: Marbled Lemon-Blueberry Butter Cake

The best part, of course, is getting to eat homemade cake!! But the second best part is getting in a little decorating practice. I always keep it simple, mainly because I don’t have the finishing skills to make it fancy, but simple suits me best anyway. One thing I’ve discovered is that a few easy to crank out gumpaste or fondant flowers can make even a mediocre frosting job look pretty good!
I was a little on the fence when I saw we’d be making this particular cake, though. It felt like we’d just done the Triple Lemon Chiffon…although looking at my archives, I now realize that was back in March. My, how time flies– I guess we are due for another lemon cake!
This one’s a different animal from the chiffon altogether. You can tell it’s a butter cake, with its nice tight crumb…it is definitely lemony, which I loved (although I do admit to never measuring zest, and may have been heavy-handed). The frosting is a really rich buttercream…but the kicker is the homemade blueberry jam in the middle (and in the marble). How perfectly summery!

I absolutely love how you frost your cakes. I know you said you keep it simple, but even simple, I am hopeless. I was only thinking the other day I need more practise in this department. I loved your party cake the other week (how you used the back of the spoon?), and this technique is lovely, too. Is it just a spatula? May need to have a further look through your site for other tips and hints! 🙂

Wow, looks wonderful. I just made a recipe last week that had a blueberry and lemon taste too it and I thought it was great. Those two work together so well. This will have to be my next venture.

I’m always heavy handed on zest – if I want a citrus note, it needs to be strong! Love the blueberry / lemon combo, and homemade blueberry jam? Yum!

i am glad that you enjoyed making this cake. if you could have been around when i was testing the recipes, you would have been surprised. that cake was a lot of work, many versions went right into the trash! thanks for the kind words and keep on baking!

Ah that sounds delicious… just made a lemon cake for a friend’s little 80 year old Mom’s BD fun fun. She’s really funny active and cute too. BTW can you come over and show me how to make gum paste flowers? That would be so fun.
On another note your Brioche plum tart looks amazing. Just caught up and made mine yesterday with peaches and apricots. Wow, so delicious. Great work!

This is gorgeous. I’m so in love w/ blueberries this summer… and have been experimenting all over the place w/ them. I most recently did a Blueberry-Lime Pound Cake. It was quite delicious, but I’m loving your cake too!!
