creamiest lime cream meringue pie

The brilliant baker Linda of Tender Crumb picked this cool and refreshing Lime Cream Meringue Pie for TWD this week.  Lots of lime and grated ginger made for a snappy combination…just right for a hot and muggy summer’s day.  I went with a crumb crust, and used waaaay less butter in my lime cream (I don’t know anymore just how much, but I didn’t measure anyway).  The lime cream was, well, creamy, and far better in taste and texture than some heavily cornstarched giggly-wiggly meringue pie fillings I’ve had in the past.

    Yes, it did have a much softer, creamier consistency than most lemon or lime meringue pies. Yours looks beautiful!

    I used all the butter and it was so scrumptious, but next time I’ll definitely follow in your footsteps with “a lot less butter”…

    I used about half less butter in the lime cream. It would have almost tasted like butter otherwise!

    Do tell – how did you get that gorgeous browning on your meringue…oven or torch?

      thanks! i ran it under the broiler…would’ve used my torch actually, but it is out of gas at the moment.
