Carla of Chocolate Moosey chose one sexy tart for TWD this week– Dorie’s Chocolate-Crunched Caramel Tart.  Soft bittersweet ganache on top of caramel and peanuts…this is rich and decadent.  Using a high percentage chocolate and taking your caramel to a deep amber keeps it from being overly sweet.  It’s a special occasion tart that’s surprisingly easy to make, especially if you’ve had some chocolate shortbread dough hiding out in the freezer for a rather long while (I used it instead of making a new batch of sweet tart dough).

      It Dorie’s chocolate shortbread tart dough recipe, near the back of the book. Could defintitely be rolled out and turned into cut-out cookies, though.

    “surprisingly easy” is right! Pairing it with the chocolate tart dough sounds amazing. I didn’t use a crust and didn’t miss it, but if I were to make it with one, this would be the way to go!

    The chocolate on chocolate is really decadent looking! I love finding resources in the freezer. Last week I needed to make some last minute cupcakes and happily I found just enough buttercream squirreled away in the freezer to ice them.

    Stopped by to visit your TWD Tart and I was wooshed away by your vols-au-vent. he he So, I came back. A worthwhile return I might add. he he Anyway, truly beautiful. Hope you enjoyed eating some as well. What kind of chocolate did you use? I thought this was pretty easy to make (I don’t have little hang-ons pulling on my legs or disputes between siblings to interrupt my caramel making) from start to finish. Wasn’t lucky enough to have the gift of pastry in the freezer. Loved the tart though. Yours is gorgeous as always.
