The Cake Slice: White Chocolate Layer Cake
December 20, 2009 at 1:11 am | Posted in cakes & tortes, groups, layer cakes, sweet things, the cake slice | 20 CommentsAs I type, we are in the midst of the first big winter snowstorm here in NYC…so it seems only appropriate that I share with you this white-on-white White Chocolate Layer Cake chosen by the Cake Slice Bakers this month. I’m not super keen on white chocolate, so I probably would have bypassed this recipe if not for the group, but I have to say that I was pleasantly surprised. It’s the toothachey sweetness that really bugs me about white chocolate, but for every element of white chocolate here (it’s in both the cake and the frosting), there is an element of tanginess to balance it out. For the cake, it’s buttermilk. For the frosting, it’s cream cheese. The cake is moist and soft, and c’mon, let’s face it…cream cheese icing would make pretty much anything taste good…so whats not to like here?

Cream cheese does make everything better! I wouldnt have picked this cake either but, I did like it quite a bit!

Great job on your cake to end the year. I too am not keen on white chocolate but like you, this cake really surprised me. In fact I liked it a lot and will probably bake this again some time. Wishing you and your family a very Merry Christmas.

Wow! I prefer dark chocolate myself but I can’t deny that this looks gorgeously delicious. You used a healthy amount of frosting in the layers too! 🙂

This cake looks so tall, I like how the edges look all smooth and neat with the sprinkles being scattered over the top. We don’t see enough white chocolate cakes!

I’m glad to hear this cake isn’t as sweet as last month’s (I’m a little delinquent in making it!). I hadn’t thought about how the buttermilk and cream cheese would interact with the white chocolate, but now I’m looking forward to making it. Yours looks like a wonderful Christmas cake!

I am with you. Typically don’t like white chocolate cakes, and avoid them if possible. It’s nice to do something, however, and be suprised. That’s the beauty of online baker clubs!
