The Cake Slice Bakers are baking up a true slice of Americana this month– Red Velvet Cake.  Even though this cake has been super trendy in recent years, and I even though make a giant batch of it at work every day, I’ve never been so enthusiastic about red velvet.  All that food coloring makes me a bit uneasy.  A good thing about making it at home, though, is that you can control how much Red 40 does or does not go into it.  Just like the other time I made red velvet here, I used only a couple drops of gel coloring…more of a “rust velvet,” I guess.

I generally think cream cheese frosting and red velvet go hand-in-hand (although where I work, we use a cinnamon buttercream), but this recipe has a boiled milk frosting with coconut and pecans.  That’s new to me, but I really do think the frosting made it the best red velvet I’ve ever had (probably because it reminded me of my most favorite cake, German chocolate)!  And the texture of the cake’s crumb was great, too…soft and, of course, velvety.

  1. Hi Steph, your velvet cake looks super yummy – great job! You’ve now gotten me convinced on trying out the original frosting. I do agree with you that the cake was really moist.

  2. Another Southern Cake recipe I need to try – I’ve had the book out for over a week, prodding me to bake something from it – this might be it! Looks great! And not overly Ronald McDonald Red…. I agree – that frosting looks delish…. what a great looking cake!

  4. This looks great, I need to have another go at red velvet cake as the first time I did it I didn’t have any gel food colouring and it was a disaster colourwise. Now I have the gel colouring so I should be able to make it nice and red. I actually prefer it when it isn’t blood sucking red.

  7. I try not to think about all the coloring that goes into this cake as well. I’m really loving this variation with the nuts and coconut, especially since you made it look so beautiful.

    • No, I haven’t tried beet juice…I’ve heard both good and bad reviews of beet red velvet, so I’m conflicted! 🙂

  10. I haven’t had a chance to make my cake yet, I’m as behind as usual, but its good to know the icing was so good too – I haven’t decided yet what frosting I’ll make, but your cake looks lovely!

  11. Yum. I like the sound of cinnamon buttercream. I’m going to make the German Chocolate cake soon, it looks wonderful and sounds even better! Might just wait a few days for it too cool down here in Adelaide (40C).

  15. I forsted mine with cream cheese frosting and added in the nuts but no coconut. I thought it was also the best RVC I’ve ever had.

  17. Oooh wow, I’d never heard of red velvet cake until this time last year!! The frosting definately sounds something different, yumm, I’ve only ever tried red velvet with white chocolate buttercream so I would like to try it with different types as well! Your cake looks like perfection 🙂
