dulce de leche duos

So, I was standing in an aisle at the store, staring crossly at a $7 jar of DdL, wondering if these Dulce de Leche Duos, chosen by Jodie of Beansy Loves Cake for TWD, would be worth it.  Then I suddenly remembered I had an opened can of condensed milk in the fridge.  Score!  I went home and put David Lebovitz’s oven-baked method to the test.  It worked like a charm, and I think I will go with this technique (rather than boil-in-the-can) in the future.

With dulce de leche both in the cookie batter and acting as the filling, these cookies are sweet, to be sure.  I imagine, though, that the chewy cookies could hold their own as-is, no sandwiching required.  But gilding the lily a little doesn’t hurt either…these are tasty!

For the recipe, see Baking: From My Home to Yours by Dorie Greenspan, or read Beansy Loves Cake.  Don’t forget to check out the TWD Blogroll!

wow…. those are puffy cookies! How did you get them like that? Mine flattened out like pancakes! Great, but flat! Glad you found the “homemade” DDL recipe – I loved making it myself! The perfect filling for these cookies – these look beautiful

What is not to like about dulce de leche!!! Yummee!!!

Did you use only chocolate for the filling? I don’t see the Ddl in the middle. Sounds like you and me both thought they were a little too sweet.

Are you finished with your job at the bakery yet?

    • steph (whisk/spoon)'s avatar

all wrapped up at the bakery, and currently visiting my folks in seattle. i didn’t use any chocolate…that goo in the middle is the DdL. i didn’t take mine super dark, because i got sick of checking it in the oven…”lost” was about to start, and i have my priorities. hehe!

I actually loved the cookies on their own, but sandwiched with the dulce it was too sweet. Your duo looks perfect! Glad you had luck with oven method for the DDL – I made mine in the crockpot but I hope to try the oven method another time.

Ok……what gives?? Yours came out looking gorgeous!! Mine, like many others, were a flat mess, even with adding extra flour! Did you make any changes to the recipe?

    • steph (whisk/spoon)'s avatar

no, no changes. i did chill the batter before baking, but that’s something i always do with cookies, because it really does help control spread.

      • Viki's avatar

Huh….maybe I should have chilled mine longer, but I was just too darn impatient!

A friend of mine did the boil method and forgot to check the water in it, and it exploded all over her kitchen.

She said it took months and months to get the caramel off the ceiling, and little places she never thought it’d go.

I use the crock pot method.

    • steph (whisk/spoon)'s avatar

yes, i have heard of other disasters with the boil method, so i watch it carefully (although i may use the oven method from now on). i don’t have a crockpot. 😦

I love how puffy your cookies are! Mine were a little flat but it didn’t affect the taste. I loved these cookies. I agree they could hold their own as-is but why wouldn’t you sandwich them? Double the cookie double the fun! HA!

I’ve baked condensed milk in the oven, too. A Chilean friend told me about it. Great that David does it, too. How much cheaper is it that way? Like making homemade creme fraiche. Super easy. Super cheap!
