The Cake Slice: Banana Cake with Chocolate Frosting

The two are quite different, but my reaction is the same: bananas make for a darn good cake! The cake itself was so moist and flavorful. I can see it being great with a little cinnamon or espresso powder mixed in, or re-engineered as a snack cake. It’s one I’ll make again, for sure…
…The chocolate frosting, though was a different story. It turned super thick after I added the last addition of powdered sugar. So thick, that I couldn’t spread it. Rather than toss it in the bin, I put it over gentle heat until it just started to soften. Then it was use it or lose it time, so I immediately swiped it on the cake in one pass. I think I did a reasonably good job, all things considered, but can you see how the frosting looks a little dry and crackly? It tasted good, and had quite a fudgy consistency, actually, but I think I’ll go with a tried-and-true chocolate frosting next time and save myself the stress.

I agree that this cake was deliciously moist and yummy. Glad to see I wasn’t the only one with frosting problems! Think its coated your cake quite well though.
You say at the bottom of your post that its red velvet cake, must ahve been reused from another post – I do the same thing 🙂

I do agree with you that bananas make for a darn good cake. Couple it with chocolate .. huh even better! Yours turned out great. Loved that you have kept it simple as it is truly the cake that just needs to be enjoyed.

I enjoyed this cake as well! But I didn’t have such luck with the frosting. The frosting that I ended up using tasted good, but I think banana cake is better paired with cream cheese forsting, in my humble opinion. 🙂

Good save! I’m always nervous about chocolate frostings, they either seize up on me or are too thin. That was a brave move to heat it up. The cake looks perfect!

espresso powder and cinnamon sound like an awesome idea..will give that a try the next time I make it.
Your cake looks deliciously moist…and the frosting must have been wonderfully fudgy with that banana cake.

How’s my favorite baker? Your banana cake looks super scrumptious, extra thick frosting and all- I swear that frosting is just cursed! I ended up going with the Instant Fudge Frosting in Sky High (after getting the go-ahead from Katie to deviate from the required recipe). All’s well that ends well I guess, as it turned out delicious. Wow, imagine that, I was JUST flipping through the book, deciding if I should bake this cake or not. I opted for a different recipe, the cake is waaay too moist, frankly, quite crappy and now I wish I made this instead. Ohwell, I have 5 bananas left to use!!!
