Tuesdays with Dorie: Rum-Drenched Vanilla Cake

It has a perfect crust, a perfect crumb and it’s saturated with vanilla and rum. It is simply the best poundy-type cake I’ve baked up. I would be totally happy to devour it plain, but as luck would have it, there were poached cherries in my fridge. Big, no, huge thanks to Wendy for choosing this for TWD!

Poached cherries? Are you going to post a recipe? I liked this cake but definitely want to add something to it and this sounds fabulous.

I have to agree – I have never had that “dome” before – mine usually sinks a little in the center – yours is fabulous (how do you do that???) Wonderful addition of poached cherries as well!

Ah ha!! See, this is exactly what I thought it would look like. Mine was a hawt mess – twice. I’m still not sure what I did wrong since the only thing I changed was to leave out the rum, but yours makes me want to try again some time. Beautiful job!

I took my cake to a potluck-type get together and someone else brought fresh fruit. That pairing was great, so I can only imagine it with poached cherries! Sounds divine.
