Tuesdays with Dorie: Chewy, Chunky Blondies

chewy, chunky blondies

I never make blondies (except for this batch, obviously).  I don’t know why…they are like chocolate chip cookies on steroids, and who wouldn’t like that?  Nicole of Cookies on Friday picked Chewy, Chunky Blondies for TWD, and they are certainly juiced up with chocolate chips, toffee (or butterscotch) chips, walnuts and coconut.

I love butterscotch, but I hate those fake-tasting chips…I still have toffee bits left in the freezer from the Caramel Crunch Bars (yeah, apparently they last forever), and I was happy to use those instead.  With all that’s going on in these blondies, I wanted to tame the sweetness a little, so I cut back just a bit on the sugar and used unsweetend coconut flakes.

    If possible, I may like blondies more than brownies. I suppose its deep caramel flavour is unsurpassed, and if you still want your chocolate fix, you could easily add bits of chocolate to it! These blondies look marvelous!

    I know what you mean! They were super sweet. You can’t get butterscotch chips in the UK so I used dime bars which are like heath bars. They were pretty good but a very small amount was enough. Yours look very good!

    jealous that you have a stash of brownies in the freezer, duh what’s wrong with me? I eat them? oh well….. about those blondies, I was never more surprised. Really surprised! I guess when your expectations are not high, that’s what happens. I’ve never been a big fan. Like you I never bother but these were something I will make again for sure. I love that you used toffee made with your own little hands. That’s awesome. I’m sure a great addition to your blondies. Must try that too.
