summery peach upside-downer

Sabrina of Superfluous chose Cranberry Upside-Downer For TWD this week.  This cranberry cake sounds sooo good, but it will have to wait for cooler weather (and cranberry season).  In the meantime, I made Dorie’s summertime version with peaches and raspberries for Labor Day weekend.  I don’t know about you, but I think it looks like sunshine!

The topping isn’t caramelized like it is in a pineapple upside-down cake, but it infuses the fruit with buttery sweetness, all the same.  And the cake is soft and full of cinnamon.  I made a half recipe, and it was all R & I could do not to eat it all in one go!  The cranberry version is definitely making my fall baking list.

For the recipe, see Baking: From My Home to Yours by Dorie Greenspan, or read Superfluous.  Don’t forget to check out the TWD Blogroll!

I just love that you made it with peaches and I want to try it that way next. I actually had some cranberries in my freezer which surprised me. We loved this one. Great recipe.

I made this summery version too. Used peaches and raspberries from my in-law’s garden. I loved it. I agree, it wasn’t as caramelized as a pineapple one would be but still so buttery!

    Yours looks delicious!

Your peaches are so vibrant! I did a White Peach version, but my peaches are too washed out in color 😦

I used peaches, too, but I absolutely LOVE your idea of adding raspberries. Brilliant! Peaches and raspberries are our fruits and berries of choice. We had to enlist a lot of self control to NOT devour this cake in one sitting…oh man! It was sooo good!!!

That is a beautiful cake. Love the peaches and raspberries. What did you glaze it with to make it so shiny and lovely.
