Tuesdays with Dorie DC: Chocolate-Cornflake Haystacks

Anytime I have a box of cereal open, it sits on the counter forever…case in point, a box of cornflakes I bought in January to help test a recipe for a friend. It’s still there on the counter now (and shockingly not stale!), even though I depleted the inner bag by a bit making Chocolate-Cornflake Haystacks. These are little crispy, chewy mounds of cereal, coconut, pecans and raisins (you could swap these add-ins for others, if you’d like) bound together by egg, agave and melted milk chocolate. They’re pretty sticky to scoop out raw, and I was concerned that they wouldn’t hold together, but they were just fine when baked. They’re good little snacky cookies and it’s not hard to eat a couple at a time.

Thanks! I used a high percentage milk from Valrhona that I had a sample packet of…maybe that made them look a little darker?

I keep eating these but not loving them somehow! They are just okay in my book i guess. Glad you enjoyed them and yours look perfect.

I’m glad mine weren’t the only cookies that ended up a little darker. I was getting a little paranoid that I’d made a huge mistake!

My household is the complete opposite when it comes to cereal. It is the number one snack item in our house and an open box is an empty box. These were easy to make and came together like magic.

I liked these too. I accidentally used choc chips instead of melting the chocolate but it worked out anyway.

Oh, your little haystacks really do look like little haystacks…very cute all lined up like that. Lol on the cereal at your place…when the boys were growing up, it would not be unusual for a box of cereal to be gone within a day…Matt used to take a box of cereal and a quart of milk to eat and drink after swim practice in the morning before school. Those swimmers eat a lot. Now, a box of cereal, like you say…sits around for ages. These cookies are a good way to make good use of that opened box of cereal!
